Enchiladas
I finally felt like cooking this week (and updating my blog if you hadn't noticed). My friend Jackie recently gave me The Pioneer Woman's Cookbook. It's wonderful because it gives you pictures to follow as you make a dish.
Tonight I tried the Simple Enchiladas recipe and they turned out pretty well. Even my hubby gave it the thumbs up!

I LOVE this recipe! I make it on Christmas Eve every year. It's seriously the best enchilada recipe I've ever tried, and I should know, right? I'm craving enchiladas now.
